Friday night: potato bourekas with mushroom sauce then baked salmon fillet and spaghetti tossed with roasted eggplant and garlic. Fresh green salad. Cheesecake for dessert.

Shabbat lunch: other than a mushroom-onion quiche and cheesecake for dessert, I have NO IDEAS!!!

HELP!!!!!!!!!!!!!!! Would rather not have a pasta dish. Or legumes. And since it's a dairy quiche, and my guest doesn't eat red meat or like chicken or turkey, that's all out of the running too.

Make your own salad? Felafel, humus, pita, and dipping sauces?

Er, hi. Meandering through via friendsfriends...

Roasted peppers, tomatoes, and onions (perhaps topping baked polenta rounds)? Spinach salad? Cucumber salad (there's a nice one with cucumber, mint, feta, and thinly sliced lemon)? Baked winter squash with cumin, raisins, and almonds? Kohlrabi slaw? Watermelon salsa and chips?

You could also do a tabouli salad.

If you're not looking for a salad, you can make a teriyaki-fried tofu thing with peppers and some other veggies.

how about tofu, onions, tomatoes, potatoes, squash, bell-peppers, basil & other herbs stew? You can also add Chalumi (חלומי) cheese to it.
